I use default EasySocial avatars system.
I want every users, which not uploaded avatar have Letters in avatar image.
Is that possible?

Yes, this is what it does.
It only checks at user login.
This means if a user removes own avatar, the new one will only come at next login
(although I could also make it at log out ... )

So plugin checks if user use default EasySocial avatar?
If yes - it displays Letters, if no - it displays normal avatar.
Is that correct?

almost.
This only processes at user login

1- user logs in
1 a - User has an avatar set -> PLugin does nothing
1 b- User has ES default avatar ->PLugin creates a new one for him based on the plugin settings

2 - plugin is set to check if user has a gravatar account with avatar set
2a - No avatar found at Gravatar.com for that email so default garavar plugin is set or Letter avatar

3 - Plugin is not set to use gravatar and will automatically generate a letter avatar
